Our Cheese

Bleddyn – A soft cheese with a bloomy rind

Bleddyn is a real showstopper, showcasing the richness and quality of our farm’s milk. Carefully handcrafted and matured here on the farm, this soft cheese develops a beautiful bloomy rind and a changing character as it matures.

When young, Bleddyn has a firm, chalky centre and a delicate, subtle flavour, perfect for those who prefer a gentler cheese. As it matures, the texture softens and becomes wonderfully creamy, with a deeper, fuller flavour that grows in character while retaining its rich, elegant nature.

Bleddyn lets the quality of our milk shine through, with its distinctive character developing naturally through the cheesemaking and maturation process. The result is an expressive yet beautifully balanced cheese that offers something different at every stage of its journey.

For a delicious cheeseboard, pair Bleddyn with sweet fruits such as grapes, dried apricots or dates. A drizzle of honey complements its natural richness, while plain crackers or fresh bread let the cheese take centre stage.

Brochwel – A traditional Caerphilly-style cheese with a natural rind

Rooted in Welsh cheesemaking tradition, Brochwel celebrates the simplicity of a well-made Caerphilly. Handcrafted here on our farm using our own milk and traditional methods, we keep things simple, allowing the natural character and quality of the milk to take centre stage.

Our milk reflects the land it comes from, with the soils, grasses and changing seasons all contributing to its character. As Brochwel matures, its natural rind plays an important role in developing its flavour, allowing the cheese to evolve naturally during its time ageing on the farm.

Fresh and lactic when young, Brochwel has a gentle tang and a smooth, buttery texture. As it matures, these flavours develop into something deeper and more rounded, while the cheese retains its characteristic smoothness. The result is a traditional cheese with a fresh, approachable character and a growing depth of flavour.

For a simple cheeseboard, pair Brochwel with crisp apples or fresh berries, whose natural sweetness brings a lovely contrast to the cheese. Serve with plain crackers or fresh bread and let Brochwel speak for itself.

Celebrating the Land & the Legends

On the banks of the river Banwy, where two rivers meet and meadowlands stretch green and wide, lies Newbridge farm, but this land has a history far older than even the farm its self.

Just a short walk from our fields are the earthworks of Mathrafal, once the great seat of the Kings and Princes of Powys, the ancient rules of mid-Wales. Mathrafal was a centre of Welsh power from the early medieval period until its fall in the 13th century, a place where law was shaped, alliances made and stories of heroism were sung - its name still echoing across the hills and pastures that now feed our cows.

Among those princes was Bleddyn ap Cynfyn, the founder of the Mathrafal dynasty in the 11th century, a leader who brought law and order to the land and whose life has inspired our soft, expressive Bleddyn cheese.

Close by, the ancient village of Meifod become the spiritual heart of the kingdom, where Brochwel Ysgithrog, a warrior prince of the 6th century whose summer residence overlooked these valleys, and his son Saint Tysilio helped shape early Christian Wales - names we honour in our firm Brochwel cheese.

These stories are not distant tales, but part of the very soil where our herd grazes and our milk matures. Every wheel of cheese we make carries the character of this land - its history, its seasons, and its enduring pride. In naming our cheeses after the princes of Mathrafal, we connect our craft to heritage, giving every bite a sense of place and purpose.
